The omakase is the chef's multi-course tasting built around seasonal Pacific seafood, and it is the signature way to eat here. Main courses typically run from the mid-thirties to mid-forties, while omakase ranges from about eighty dollars to well over two hundred.

First-timers usually choose the omakase to taste the chef's greatest hits plus whatever is best that day. The signature Tojo Maki and the Tojo's Selection sashimi are house landmarks worth trying.
