Sushi Hil

Sushi Hil is an intimate Mount Pleasant sushi bar led by Chef Hilary Nguy, who spent more than two decades in Japanese kitchens after starting at Temaki Sushi in 2003 and opened his own room in 2022. It holds a MICHELIN Bib Gourmand and was named Best Sushi and Gold for Best Japanese at the 2026 Vancouver Magazine Restaurant Awards.

The bluefin otoro sashimi and the lightly seared A5 wagyu nigiri are the luxe highlights, and the kitchen treats vegetables with the same precision, like the sesame-dressed spinach gomaae and the complex, vibrant Super Garden Roll.

Sushi Hil works well for a date night or special occasion, with an intimate room and precise counter cooking. It is polished enough for a business dinner but relaxed enough for a casual night out.
